There is a long pause between the time a truffle reaches full size and the time when it fully matures. Summer truffles are less flavorful since they are dug up before the full maturation period is reached in the winter months. You will always pay more for black winter truffles.  Rating: - Good, but..........I Cannot get enough of these things for my cooking needs. This is a good price and the flavor is wonderful, if you cannot get fresh. Sorry Rating:  - beware, these are tuber indicum, not melanosporumThese are not black winter truffles (Tuber melanosporum). I thought the price was too good to be true, (even though they aren't fresh), and it is. These are Tuber indicums. It says so right on the label. I was very angry about this, but JR Mushrooms has said they will refund me for the truffles and even let me keep them. So I give JR credit for excellent responsiveness and customer service, although I still feel they should not be labeled "black winter truffles". Interesting ProductThis review is mostly about the seller. They are great! The product arrived within 2 days, with standard shipping. I have never had black truffles before.
